Ingredients for 2 persons:
200 grams of spinach
8 tablespoons light herb cheese
6-8 chives, finely chopped
1/4 lemon, juice only
4 whole wheat Melba toasts
50 grams of smoked salmon
1 1/2 tablespoons horseradish, in a jar
Pinch of salt and pepper
Tools:
- blender or food processor
- piping bag with star nozzle
1. Combine the spinach, herbed cheese, chives, salt, and lemon juice in a blender or food processor and blend until smooth. Season with pepper.
2. Fill a piping bag fitted with a star nozzle with the Philadelphia spinach spread. Pipe the spread onto two toasts: make it festive and let the star nozzle do its work in creating beautiful swirls.
3. Place a Melba toast on the salmon and cut the salmon into slices to fit the toast. Spread two slices of toast with horseradish and then top with the salmon. Place the toast, salmon-side up, on the herb cheese and spinach spread.
