Skimmed milk

In the hospitality industry, cappuccinos and lattes are prepared with whole milk as standard. Fluffy froth

What makes a good cappuccino? Exactly: the milk froth. This should be firm enough not to collapse and "fuffy" enough to drink. Contrary to popular belief, skim milk is perfect for making milk foam. Zo doe je dat

En dan nu het stappenplan:

  1. Schenk wat koude melk in een (schoon en droog) kannetje.
  2. Klop de koude melk met een garde gedurende 20 seconden. Dat het er hier na nog niet spectaculair uitziet, moet je even voor lief nemen: het komt echt goed.
  3. Verhit de melk in en steelpannetje of in de magnetron en zorg dat hij niet overkookt (dan raak je het schuim kwijt).
  4. Komt de melk omhoog? Dan is je melkschuim klaar.

Hoe deze magie tot stand komt? Dat heeft te maken met de eiwitten in de melk. De opgeklopte luchtbelletjes zijn omgeven door eiwitten en door verwarming verandert de structuur van het eiwit in 'zacht' naar 'hard'. Op deze manier zakt de boel dus niet meer in elkaar.
