1. Keep it simple
You could go all out and make a dish with 36 ingredients, but let's face it: few people have the time or inclination for that. Also, spices and the like are not always available in single servings, leaving you with a lot to spare (and your pantry overflowing). Therefore, choose a dish with not too many ingredients and not too long preparation time.
2. Opt for a one-pot dish
This tip is my favorite for several reasons, and perhaps most of all because it makes for few dishes. You throw everything into one pan which means the flavors blend well and you are not constantly timing other parts of the recipe you have chosen. An added benefit: one-pan dishes are good for freezing. And that, in turn, is related to the next tip.
3. Cook for the freezer
Cooking for one person is actually almost impossible. That's because supermarkets never sell half a tomato or quarter a cucumber. So this is what you do: you cook a lot and freeze what you don't eat. Make sure you buy good freezer-safe plastic containers that hold enough for one serving. The next time you come home tired from work, all you have to do is heat up that portion.
